Dumpling and Smashed Cucumber Bowl with Peanut Sauce

This is the recipe I'm making for dinner this week. It's by Hetty Lui McKinnon from NYT Cooking. Last week my friends made it for me, and I can't stop thinking about it. They beefed up the original "salad" version by serving it over rice.

  1. make some rice
  2. mix up the sauce ingredients into sauce
  3. smash those cukes and salt 'em
  4. fry the potstickers
  5. toss the potstickers and cukes in sauce
  6. serve it over rice
  7. decorate with cilantro, sesame seeds, more chili crisp
